200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Premix (makes 850ml, to serve 10)

100ml classic gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Put all the ingredients inside a pan, bring to a light boil, stirring so the sugar melts. After that, turn off the stove allowing it to cool fully. Pour into a clean bottle, seal and store in the fridge, where it will keep for about a month.

To make Premix: Pour the specified liquid ingredients in a large bottle, allow it to infuse for one hour, then strain best through a fine cloth, to ensure it's perfectly clear.

To serve: Measure 85ml of the premix to a mixing glass containing ice, gently stirring lightly for one minute to cool it down. Filter into an frosted cocktail glass or similar, top with some cranberries and complete it using a quick spritz of the essential oil over the drink.
